  1、食材:黃瓜400克、鹽3克、菜油40克、幹辣椒5克、花椒2克、蔥10克、味精0.5克、芝麻油5克。

  2、黃瓜洗淨去蒂,切成約4厘米長、l厘米粗的條,碼鹽少許,蔥切成馬耳朵形;

  3、炒鍋置旺火上,加菜油燒至五成熱(約125℃),放入幹辣椒節炒至呈棕褐色時,下花椒炒出香味,再放黃瓜快速炒勻;

  4、加入精鹽、味精、蔥炒至斷生,淋芝麻油起鍋即成。
