  1、先用廚房剪刀将小鲫魚的肚子剪開再清理幹淨,然後用鹽,料酒腌一小時,每隔10分鐘翻動一次腌勻味;

  2、然後将蒜瓣剁末,姜切厚片;

  3、坐鍋燒油到六成熱,先下姜片,然後将腌好濾幹水的小鲫魚放入一起炸,轉小火慢慢炸至鲫魚金黃酥脆撈出;

  4、另取鍋子燒少許油,下蒜末、辣椒粉小火煸香,噴醬油,加少許水調成汁,淋蚝油收汁,倒入炸好的鲫魚,撒孜然粉拌勻撒蔥花即可。
