  1、将魚洗淨,在魚身兩面各剞兩刀(深度接近魚骨)抹上紹酒、細鹽稍腌。鍋置火上加入色拉油(很少一丁點。類似1元硬币這麼大面積即可)。油8成熱時放入魚快速的兩面煎一下。

  2、然後把鍋内放入開水,放入蔥段和姜片大火燒開後轉中火炖至湯濃白即可。炖好湯後,放入鹽和胡椒粉。即可出鍋。
