臘肉炒藜蒿

  1、食材:臘肉(肥三瘦七)300克,藜蒿根300克,韭菜150克,熟豬油50克,精鹽1克,新鮮辣椒15克。

  2、将臘肉用溫水洗淨,剔去皮,盛入瓦缽内,上籠蒸30分鐘取出,将肥、瘦肉分别切成5厘米長、0.7厘米寬、0.3厘米厚的條。藜蒿根用刀刮去表皮,洗淨後,切成4厘米長的條。紅幹椒切成細末。

  3、炒鍋置旺火上,放入豬油,燒至六成熱,先下肥臘肉和蒸臘肉的原汁,炒幾下,再加入藜蒿根,韭菜和新鮮辣椒未煽炒,接着放入精鹽,繼續炒1分鐘,再下瘦臘肉合炒,淋入清水,焖2分鐘,待收幹水,盛入盤中即成。
