羊肉湯炖法

  1、羊肉反複漂盡血水,放入沸水中焯一下後洗淨;

  2、蘿蔔切條;

  3、将羊肉放入洗淨的鍋摻清水,鍋置旺火上燒沸;

  4、打去浮沫,放入姜、料酒、花椒,移至小火上炖至七成熟;

  5、把肉撈起改成中一字條,再入鍋,同時放蘿蔔炖至肉軟;

  6、打去姜、花椒,下鹽及味精起鍋,裝入盛器。
