  1、先将芥菜洗淨挂在陽台上晾曬一天,同時準備好一個幹淨的壇子,在芥菜曬好後就倒入壇子裡。然後起鍋燒水,加入适量鹽、花椒,燒開後盛出放涼,再倒進壇子,密封好壇口,放置半個月即可食用。

  2、酸菜可以做成酸菜鲫魚湯,我們先将鲫魚用鹽、料酒腌制一會,同時将酸菜、蒜、姜切成小塊。然後鍋中倒油,油熱後倒入鲫魚,煎至兩面金黃後倒入高湯,煮20分鐘再倒入酸菜,之後再煮10分鐘即可。
