  1、豆瓣、豆豉分别剁細;蔥切成蔥花。

  2、鍋放在旺火上,倒入菜油燒至五成熱時,先放入豆瓣炒至油呈紅色,再加入豆豉炒香,起鍋裝碗,用味碟一隻,放入炒香的豆瓣、豆豉、辣椒油、花椒面、味精、醬油、香油、蔥花調成味汁。

  3、茄子洗淨後去皮,切成6厘米長、2厘米見方的條,分兩排堆放在條盤中,然後放入蒸籠,用大火快速蒸至茄條成熟取出。

  4、剛蒸熟的茄條與調好的味汁一起上桌,吃時蘸食。
