  1、原料:嫩香椿芽150克,雞蛋6個,鹽、料酒、植物油各适量。

  2、将香椿頭洗淨,用開水燙一下,再撈出放入冷水變涼,撈出過涼切末。

  3、将雞蛋磕入碗内,加入香椿、鹽、料酒,攪成蛋糊。

  4、炒鍋注油燒至七成熱,将雞蛋糊倒入鍋内,翻炒至雞蛋嫩熟,淋上少許熟油,裝盤即可!
