  1、材料:鮮牛肉500克、食鹽40克、味粉4克、冷水100克、粉30克。

  2、将鮮牛肉切片狀,用環形小鐵槌捶爛,有冷水、食鹽、菱粉翻拌,弄成牛羊肉膠,用力将牛羊肉膠揉成丸形,放入鍋中,加冷水,用慢火浸熟水清,丸浮不面為标準取起,焖、炒等鹹宜。這類作法要留意,牛羊肉務必新鮮,不然沒有膠原纖維,捶不爛也易出水量,做成的肉丸便不滑爽。
