  1、毛肚改成條,汆燙至硬挺斷生時撈出備用;幹辣椒切1.5厘米的段, 姜、蒜切片。

  2、用鹽、味精、醬油、香油、白糖、水澱粉、鮮湯調成味汁備用。

  3、内下入色拉油,燒至六成熱時下幹辣椒、花椒炒香,然 後下毛肚、姜片、蒜片、香蔥炒出香味,烹入味汁,待汁收幹時起鍋即成。
