  1、配料:肉碎,蝦皮;

  2、調料:鹽,味精,糖,鎮江醋,生粉,姜;

  3、肉碎,蝦皮用鍋爆香與雞蛋打勻調味;

  4、韭菜切段也與雞蛋拌勻;

  5、鍋上火放入油将調好味的雞蛋放入,煎好,用水烹煮一下,取出斬件裝盤;

  6、鍋中加入水,放入姜末,鹽,糖,醋調成西湖醋汁,淋在煎好的雞蛋上,撒姜末即可。
