  先把大蒜剝皮後放在一個器皿裡,然後放入少量的醋、溫水和白糖,最後密封保存一個星期即可。大蒜的種類繁多,依蒜頭皮色的不同,可分為白皮蒜和紫皮蒜;依蒜瓣多少,又可分為大瓣種和小瓣種。白皮蒜的蒜瓣外皮呈白色,辣味淡,耐寒,耐貯藏。白皮蒜有大白皮和狗牙蒜兩種,前者蒜頭大,瓣均勻。
