  1、茄子500克,蒜頭10克,蔥末、姜末、鹽、醬油、花生油、味精、料酒、白糖各适量。

  2、先将茄子洗淨去蒂,撕成塊狀備用;蒜頭去皮切片,香菜洗淨切段。炒鍋注油燒熱,下入蒜片,蔥姜末爆鍋,倒入茄子翻炒至軟熟時加入醬油、白糖、鹽、料酒,炒至茄子熟透,用旺火收濃湯汁,放入味精、香菜,翻勻出鍋即可。
