鳕魚羹做法步驟

  1、材料用量:銀鳕魚250g,香菜少許,雞蛋一個,姜片二片,植物油、鹽、胡椒粉、料酒、糖、雞精、澱粉适量。

  2、做法:鳕魚去骨、去皮,魚肉切成小一點的塊,用鹽、胡椒粉、蛋清、少許澱粉腌15分鐘;香菜洗淨切段,雞蛋打散成蛋液;鍋中燒熱2大匙油,煎香姜片和魚骨、魚皮,滴入料酒和加入2杯水,煮滾後改小火煮20分鐘,過濾掉魚骨魚皮,做成魚高湯。魚高湯加水至約2杯的量,加鹽和少許糖和雞精調味,放入鳕魚煮滾後用水澱粉勾芡,淋下蛋液成蛋花,關火、撒下香菜末即可。
