  1、雞腿刮洗幹淨,用刀将肉面劃開,剔去骨頭,用刀在向上剞上交叉刀紋,用醬油,料灑腌漬50分鐘。

  2、鍋内放入植物油燒至八成熱,将雞腿放裡炸呈金黃色,撈出瀝油。

  3、鍋内放入底油燒熱,放入蔥段,姜片炸香,添湯,加入各種調料和紅曲粉,燒開後打淨浮沫,放入雞腿用慢火鹵熟,取出晾涼,刷上香油,改刀裝盤即可。
