  1、青魚塊洗淨用料酒腌十分鐘,生姜切絲,蒜苗切段。

  2、鍋内油燒至七成熱,将生姜放入炒香後撈出。

  3、繼續将油鍋燒至冒煙,放入青魚塊,煎至兩面起皮。

  4、倒入醋爆數秒,然後倒入生抽,生姜,茶油臘八豆及小半碗水,蓋上鍋蓋焖會。

  5、待水快燒幹時,下入蒜苗,如果淡了就加适量鹽。

  6、等蒜苗熟了就起鍋,紅燒青魚塊就做好了。
