  1、材料:蛤蜊300克、蝦仁300克、豬肉餡500克、韭菜400克、姜30克、胡椒粉4克、食鹽10克、蚝油10克、油30克、黃酒20克、面粉500克。

  2、蛤蜊用淡鹽水多浸泡沖洗幾次,讓其把沙吐幹淨。然後在水中加姜絲和黃酒、胡椒粉,然後放入蛤蜊煮,待蛤蜊開口就撈出。把貝肉剝出來,再清洗一下,以徹底除沙。蛤蜊肉擠掉多餘的水分,剁碎,但不要太碎。鮮蝦仁用胡椒粉和黃酒抓拌均勻,腌制幾分鐘,然後剁碎。把豬肉餡、蛤蜊肉、蝦仁碎全部放入盆裡,加鹽、胡椒粉,姜末。黃酒、和蚝油也放入,加食用油。順一個方向攪拌均勻,讓肉上勁兒,把韭菜切碎放入,先用香油把韭菜拌均勻,以鎖住韭菜的水分。把韭菜和肉餡拌均勻,面和成面團擀皮包餃子,把餡料包入餃子皮中,蒸熟即可。
