  1、鲫魚去腮去内髒。

  2、用刀在鲫魚背後劃十字刀,放入适量鹽、老姜(拍碎)、蒜米、蔥節、料酒碼味去腥待用。

  3、把碼好味的魚放入蒸鍋内,用蔥節、老姜墊底,蒸熟即可端出。

  4、在蒸魚的同時準備調味汁,把折耳根嫩莖切成顆粒,韭菜、香蔥切成花,紅辣椒剁碎成末,然後放入蒸魚豉油、生抽、白糖、适量鹽,就可以了。
