酥脆雞排怎麼做

  1、雞胸肉2副(約1斤)、蛋黃2個。炸粉材料:日本太白粉2杯、面粉1杯、白胡椒粉2小匙、鹽2小匙、泡打粉1/2小匙、鹽、白胡椒粉各1小匙,醬油1大匙,太白粉2大匙。

  2、将雞胸肉去除大骨和皮的部份,用刀背或肉鎚輕輕搥打正反兩面。搥打完洗淨擦幹用刀從雞胸肉側面将雞胸肉剖分為兩半。

  3、将雞胸肉用腌料腌10分鐘,後加入蛋黃拌勻,用手用力抓,炸前再沾炸粉。

  4、将4杯油燒熱至七分熱,炸2分鐘至外表呈金黃酥脆即可。
