做甜豆漿步驟

  1、主料:黃大豆500克、白砂糖75克;

  2、将黃豆洗淨,放入盆中浸泡(夏季泡5小時,左右,冬季泡10小時左右);

  3、将黃豆撈出上磨,用清水7千克磨漿,磨時,須控制好流水量,使其不大不小,做至磨不停,水長流,磨完後,将流下的水漿倒入四角吊起的紗布包内,晃動,擠壓,濾下原漿,然後再将紗布包移到另一盆内,加入清水2千克,與豆渣攪拌,擠壓,濾下二漿,接着,再濾三漿;

  4、将一、二、三漿倒入鍋内燒開熬煮,開鍋後改用微火保溫,食用時,将豆漿盛入碗内,加入白糖即可食用。
