  1、鳝魚五條。

  2、調料:醬油兩匙,紹酒五匙,精鹽少量。

  3、鳝魚剔去脊骨即成鳝片,将每尾鳝魚都切成三片,然後把兩尾鳝魚放入由醬油、紹酒各兩匙調成的腌料中腌30分鐘。

  4、剩下的兩尾鳝魚放入由少量精鹽及兩匙紹酒調成的腌料中腌20分鐘。

  5、用竹串穿插鳝魚片,風幹兩天後放在冰箱中冷藏。蟮幹就做好了。
