  1、主料:平魚650克,冬筍300克;調料:植物油20克,料酒10克,香油5克,胡椒粉3克,澱粉(玉米)3克,鹽3克,大蔥5克,姜2克,大蒜(白皮)5克。

  2、将平魚去内髒、頭、尾,取淨肉片成片;

  3、冬筍去皮,洗淨切成片,下入開水鍋内加精鹽煮開,撈出控水備用;

  4、大蒜、蔥姜均切末;

  5、胡椒粉、香油、水澱粉調勻成芡汁;

  6、炒鍋注油燒至七成熱,放入魚片煎至兩面金黃色,加入蔥姜蒜末,筍片,烹入料酒,倒入芡汁,燒五分鐘即可。
