  1、牛肉370克,大米75克。調料植物油50克,醬油30克,花椒、胡椒粉各3克,辣椒。

  2、粉2克,蔥、姜各8克,料酒13克,豆瓣醬30克,四川豆豉5克,香菜少許。

  3、大米炒黃磨成粗粉。蔥切成蔥花。豆豉剁細。姜搗爛後用少許泡之香菜洗淨切碎。

  4、牛肉切成薄片(長4厘米、寬2.5厘米)用油、醬油、姜水豆豉、豆瓣醬、胡椒粉、大米粉等拌勻,放入碗中上屜蒸熟,取出翻扣盤中撒上蔥花。另用小碟盛香菜、花椒粉、胡椒粉上桌。
