  1、食材:大白菜1000克,姜15克,辣椒15克,白醋50克,白糖100克,香油40克,精鹽10克,花椒5克。

  2、将大白菜幫洗淨,切成6厘米長的細長條,用精鹽腌漬約6小時;

  3、生姜去皮切成細絲,辣椒切成細絲;将腌好的白菜擠去水分放入大碗内,用香油将姜絲、辣椒絲炒熟,鋪在白菜上面;另用白醋、白糖放入鍋内熬化,略涼後倒入白菜;

  4、炒鍋放置火上,倒入香油,燒熱後放花椒、辣椒,燒至色變黑時撈出,将辣椒油澆于白菜上,腌漬4-6小時後即可。
