魔芋豆腐的具體方法步驟

  1、食材準備:魔芋片500克、大米(或玉米)250克,

  2、制作步驟:

  (1)魔芋片和大米(或玉米)浸在水中,浸時多換水清除殘毒,待發脹後,再用石磨磨成漿,放入鍋内煮熟,即成魔芋豆腐。

  (2)芋漿在鍋中加熱時,應用木棍不斷攪拌,待完全煮熟,即鏟起放入簸箕攤晾,攤晾厚度不超過2.5~3厘米。

  (3)攤晾後,用刀切成塊狀,置水中浸泡數天,并常換水,待水沒有怪味時,即可食用。芋片膨脹系數為20~30倍,所以煮時鍋内應放足水。
