廣東蝦餅的做法

  1、先将沙蝦的頭和尾用剪刀剪掉小部分,加入精鹽、青蔥粒、五香粉拌勻先腌制5分鐘,然後加入自發粉、生油30克。用清水攔勻,成蝦餅漿待用。

  2、将鍋燒熱,放入生油,候油燒熱至油溫180℃時,把蝦餅漿淋在鍋鏟上,逐件放進油鍋炸至酥脆,并且熟透呈金黃色,撈起,用刀切成日字型件擺砌于盤間,盤邊要點綴。

  3、把白醋、白糖、番茄醬、紅辣椒醬放入鍋内煮滾,用濕粉水勾芡,最後加入麻油,用小碗盛着,跟蝦餅一起上席即成。
