  1、首先将金針菇的尾部切掉,然後将金針菇放入清水中清洗,将蔥切成蔥花。

  2、在一碗中打入三個雞蛋,撒入少量胡椒粉,用筷子攪拌均勻,将洗淨的金針菇放入鍋中,燒開水焯水2分鐘後撈出冷卻後擠幹水分置于盤中,接着将蛋液淋在金針菇上,撒上蔥花、五香粉,用筷子攪拌均勻。

  3、起鍋熱油,将火調小,倒入金針菇蛋液後攤平,待底部凝固後将其晃動避免粘鍋,接着翻面,待兩面煎至金黃色出鍋切開裝盤即可。
