  1、材料:草魚350克,熟筍片50克,濕澱粉15克,姜末5克,蔥段5克,白糖20克,醬油50克,味精1.5克,紹酒30克,素油60克。

  2、魚剁成長方塊(約5厘米長、3厘米寬);

  3、鍋置旺火上燒熱,滑鍋後放少量油,下魚塊稍煎;

  4、撒姜末、烹酒略焖,加醬油、糖稍燒,添沸水一勺,轉小火将魚燒熟;

  5、用旺火收濃湯汁,撒上蔥段,加入味精,用濕澱粉勾芡,澆亮油出鍋即成。
