  1、淋雞蛋時要全程用小火,做出的雞蛋形狀好,不會散開,如果是旺火湯滾狀态将蛋液倒入,不僅形成不了蛋花,而且蛋液還容易形成疙瘩狀,沉入湯中,湯色就混濁了。

  2、西紅柿和黃瓜片炒一下,把西紅柿的酸味和黃瓜片的清香味炒出來,這樣湯的味道濃厚。勾米湯芡會使菜肴的湯汁濃度略稠一些,這樣做出的湯口感好。
