蝦米。海米為海産白蝦、紅蝦、青蝦加鹽水焯後曬幹,納入袋中,撲打揉搓,風揚篩簸,去皮去雜而成,即經加鹽蒸煮、幹燥、晾曬、脫殼等工序制成的産品。因如春谷成米,故稱海米。以白蝦米為上品,色味俱佳,鮮食成美。白蝦須長,身、肉皆為白色,故前人有曲身小子玉腰肢,二寸銀須一寸肌之詠。海米食用前加水浸透,肉質軟嫩、味道鮮醇,煎、炒、蒸、煮均宜。
