  1、材料:海鳗一條切粗塊。

  2、配料:闆栗十數粒,去殼,用熱水稍泡、蒜頭十數粒、香菇3-4朵,泡軟切片(湯留用)、紅棗數粒、姜數片、辣椒兩條切片、蔥段少許。

  3、調味料:老抽兩大匙、米酒一大匙、紅糖一大匙、泡香菇水一飯碗、味精少許、麻油一大匙。

  4、四碗水加姜/蒜/蔥/料酒燒開,放入鳗魚塊川燙片刻,撈起濾幹備用。

  5、兩大匙油燒熱,放進所有配料拌炒,再加所有調味料以小火燒煮十分鐘。放回鳗魚,轉中火燒煮至湯汁收幹,起鍋前再撒上幾滴米酒/香醋,拌均即可。

  6、好香的味道,很嫩的口感。下酒的好菜,大補的美食。
