  1、牛肉餡剁碎,加入5g玉米澱粉,1g綿白糖,1g鹽,10ml料酒,15ml魚露,1g白胡椒粉,50ml清水,5g姜末。

  2、順時針攪拌上勁,摔打30次,大火燒水,擠出丸子,水微沸下入丸子。

  3、水沸後轉小火,撇去浮沫,撈入冰水,浸泡3分鐘。出鍋裝盤即可。

  4、牛肉丸子的主要營養是蛋白質、維生素、澱粉。
