  1、主料:芥菜頭800克。

  2、輔料:蘿蔔100克。

  3、調料:醋30克,鹽10克,白砂糖15克。

  4、做法:芥頭洗淨,用擦铳(锉絲器)迅速将芥頭锉擦成絲;放入壇罐加醋用力揉搓;然後放入三大塊蘿蔔厚片壓起來,即封上壇口。

  5、悶12小時以上;取出部分辣菜(餘下的繼續封口保存),加鹽、味精、少許糖調味食用,或加香油拌食。
