  1、春筍500克,醬油、糖适量,姜汁少許。

  2、将竹筍斬掉老根,橫着切成兩片,然後用刀切成4厘米長、1厘米厚的長方條。

  3、燒熱鍋,下油,至五成熟時,将筍條逐一放在油鍋中炸至斷生後撈出。

  4、将筍全部炸熟後,倒掉鍋中餘油,放入姜汁、鹽、醬油、糖和筍條,用大火炒至染上色、入了味後,再加些湯、味精用小火加蓋焖至鹵半幹,再改用大火收幹,下香油拌勻即可。
