蒜苗回鍋肉

  1、将肥瘦相連帶皮的豬肉洗幹淨;

  2、鍋裡放開水置旺火上,下豬肉和蔥、姜、花椒。肉煮熟但不煮爛。将蒜苗洗淨切成八分長節,豆瓣切細;

  3、将煮好的肉撈起滗幹水汽,在還有餘熱時切成約一分厚的連皮肉片;

  4、将炒鍋置中火上,放入豬油,油燒至五成熟下肉片,同時放少許鹽鏟炒均勻,炒至肉片出油時鏟在鍋邊,放入豆瓣、甜醬在油中炒出香味(根據愛好,也可加點豆豉)與肉共同炒勻,然後放蒜苗合炒。蒜苗炒熟但不要炒蔫,再入醬油炒勻,起鍋即成(如無紅醬油可放少許白糖代替)。
