帶魚炖豆腐的家常做法

  1、主料:帶魚250克 北豆腐200克。配料:蔥、姜、蒜、幹紅辣椒。調料:花椒、大料、鹽、生抽、蚝油、糖、胡椒粉、料酒。

  2、帶魚洗淨後,切成段狀,在帶魚段兩面各劃一字刀,北豆腐切成與帶魚段大小一緻的塊狀;

  3、平底鍋加油,将帶魚段、豆腐塊分别入鍋煎至表皮成金黃色盛出備用;

  4、鍋中再加油燒熱,放入佐料炒香,再依次加入生抽、蚝油、糖;

  5、再沖入開水,将煎好的帶魚段、豆腐塊放入鍋中小火炖制;

  6、再加入鹽、胡椒粉調味,加入料酒去腥,再轉至小火炖至湯汁變濃稠時撒入蔥花即可。
