  1、基圍蝦洗淨,煎去蝦須,瀝幹備用。

  2、鍋中倒入少許油,待6成熱時,放入切好的蔥白和姜片,倒入少許白酒,再加入适量清水。

  3、待水開後,放進基圍蝦灼熟,然後出鍋迅速放入冰水中浸泡一會。

  4、碗中放入味極鮮醬油、醋、姜末、香油調成料汁。

  5、蝦瀝幹水分後,蘸以喜歡的蘸料用均可。
