  1、将黃鳝剖腹挖去内髒,斬去頭,洗淨,斬成寸段;

  2、千張切細絲,放在淡堿水中泡軟,沖洗幹淨;

  3、鹹肉切小方片;

  4、蔥切成花、姜切絲待用;

  5、将千張絲放在盆内,黃鳝整齊地排在千張絲上,再放上鹹肉,淋上酒,加調味料上籠蒸25分鐘至熟取出,上面放上蔥花、姜絲、胡椒粉、澆上沸油即可。
