  1、制作原料:淨光雞750克,幹菱角300克,蔥段、姜片、幹辣椒節、八角、精鹽、料酒、老抽、白糖、味精、鮮湯、化豬油各适量。

  2、淨光雞斬成塊;幹菱角漲發後去殼。

  3、淨鍋上火,放入化豬油燒熱,先下入蔥段、姜片、幹辣椒節、八角煸香,再倒入雞塊,煸幹水氣後,烹入老抽、料酒,翻炒上色,摻入鮮湯,下入菱角,調入精鹽、白糖,燒開後轉小火焖約20分鐘,下入味精,然後用中火收濃湯汁,即可出鍋裝盤。
