  1、做法:将大鱿魚宰殺幹淨後,表面改梳子花刀。将改好刀的鱿魚放入自制蒜蓉辣醬中浸泡30分鐘,取出沖洗幹淨,表面拍一層吉士粉。鍋内入寬油燒至六成熱,放入鱿魚,炸5分鐘成金黃色撈出。将鱿魚頭切下擺在盤的一邊,鱿魚身豎切斷成三大塊,在每一塊上打斜刀,逆梳子花刀的方向切斷,成鳳尾狀擺盤上桌即可。

  2、制作關鍵:炸鱿魚時掌握好油溫,炸至金黃,外酥裡嫩時出鍋。自制蒜蓉辣醬做法:将蒜、姜和元蔥用攪拌機打成泥,加入鹽、味精、糖和桂林辣醬,攪拌均勻即成。
