  1、主料:雞肝、雞腎各4個,青瓜1條,紅椒1隻,姜2片,蔥2條,蒜頭4粒。配料:腌青瓜、紅椒料:鹽、糖各1/4茶匙。調味料:鹽1/2茶匙,老抽、生抽各1茶匙,糖1湯匙,麻油1/2茶匙,胡椒粉少許。

  2、雞肝、雞肫洗淨,氽水後瀝幹。

  3、青瓜開邊,去瓜瓤, 切片,紅椒去核,切片,拌合後加鹽、糖各半茶匙腌15分鐘,瀝幹水分,放碟上。蔥切段,蒜頭去衣拍裂。

  4、燒熱油2湯匙爆香姜、蔥、蒜頭,放入雞肝、雞腎,加調味料和水半杯,大火煮滾後,改文火炆半小時,取出雞肝、雞腎,冷卻後切片,放在青瓜和紅椒面上。
