  鑒别方法:1、用手按面團,筋力大,彈性好,說明發酵好,切開面團後,面團的孔洞小而又少,酸甜味不明顯,說明面團發酵不足,還需繼續發酵;2、用力按面團有彈性,略有下陷,有一定筋力,用力拍打時面團“嘭嘭”作響,切開面團看,孔洞較多,有一股酒香味,說明面團發得正好;3、面發起後,用手摸面團立即下陷,筋力差,切開後,面團象棉絮,孔洞較大又密,酸味重,說明發酵過火,此時要放堿或重新加些面粉再和,加面多少視發酵程度而定。
