由烴基和羧基相連構成的有機化合物稱為羧酸。飽和一元羧酸的沸點甚至比相對分子質量相似的醇還高。例如：甲酸與乙醇的相對分子質量相同，但乙醇的沸點為78、5攝氏度，而甲酸為100.7攝氏度。
通式RCOOH中R為脂烴基或芳烴基，分别稱為脂肪酸或芳香酸。又可根據羧基的數目分為一元酸、二元酸與多元酸。還可以分為飽和酸和不飽和酸。
