  1、準備材料:茄子400克、雞蛋40克、澱粉25克、小麥面粉5克、白砂糖150克、醬油5克、植物油75克;

  2、茄子去把去皮洗淨,切成小手指頭條形;

  3、雞蛋、粉芡、面粉放碗内,加醬油少許、水1勺半調勻糊,把茄子放入挂勻糊;

  4、鍋放火上添入清油,油熱六成時,下入茄子,炸至紅黃撈出控油;

  5、鍋裡油清出,鍋放火上下入白糖用勺攪拌,糖起泡發亮時,下入茄子翻兩三個身,盛盤晾涼即可。
